rich peach cobbler

Rich Peach Cobbler from scratch

Filling:
8 cups of canned peaches
2 teaspoons of vanilla extract
1 teaspoon of ground nutmeg
2 tablespoon of ground cinnamon
2 tablespoons of unsalted butter
1 cup of sugar
2 tablespoon of all-purpose flour
Juice of 2 lemons

Dough:
1/2 cup of buttermilk
1/2 cup of solid vegetable shortening (cooking grease)
1/4 teaspoon salt
2 teaspoons of baking powder
2 cups of all-purpose flour

Egg wash:
1 egg yolk
2 tablespoons of heavy cream

Instructions

Preheat the over to 350 degrees.

Making the filling:
I'll be using canned peaches it's much easier to get started
Put the canned peaches with the juice into a large pot. Heat over a medium flame.
Add vanilla extract, cinnamon, butter, nutmeg and sugar.
Cook for about 3 or 4 minutes while you stir.
Now add lemon juice and all purpose flour to the mixture and let it cook for about another 10 minutes.
After 10 minutes remove the peaches mixture and set it to the side.

If you want to make the dough from scratch:
Get a big bowl.
Combine the all purpose flour, baking powder and salt (use a big fork)
Once you finished mixing all the ingredients together. Stir in the buttermilk thoroughly.
Now clean of the surface you plain on cutting the dough on.
Now sprinkle a handful of flour on the surface and roll out the dough.
But make sure you don't roll it out to thin.

If you want to take the easy way out using the dough. Get the store bought Pillsbury brands and just cut out the strips

Second to last step, get a baking dish spray a nonstick spray at the bottom of the pan.
Now, take some of the dough and place it on the bottom.
Gather the peach mixture and pour it on top of the dough
Take the remainder of the dough and place it on top on the peach mixture in 1-inch long wide strips, arrange in lattice pattern.

Egg wash:
Take 2 egg yolks and cream and whisk together.

Then bake for 30 to 45 minutes until crust is golden brown.
